    A salad for dinner? Yes please. Especially when it’s as hearty, fresh, and easy to make as this Cobb Salad Recipe. This one earns a spot as one of our favorite summer salads with crunchy romaine leaves, juicy tomatoes, savory chicken, crispy, salty bacon, and creamy, satisfying toppings like avocado, eggs, and our favorite homemade blue cheese dressing.

    Besides the unbelievable combination of flavors, we’ve made this salad simple and quick to make, and perfect for meal prepping or making ahead. Using rotisserie chicken, pre-made dressing, hard-boiled eggs, and bacon, this dinner salad comes together in just minutes for an easy weeknight meal. Now, the only way to see what all the fuss is about is to try it for yourself!

    How to Make Our Cobb Salad Recipe

    Ingredients

    Process

    1. Place shredded romaine into a large bowl and drizzle with 1/2 blue cheese dressing. Toss together.
    2. Top romaine with tomatoes and chicken.

    1. Then top with crumbled bacon and sliced avocados.
    2. Add sliced boiled eggs and crumbled blue cheese to the salad.

    1. Drizzle with remaining dressing and sprinkle with chives. Serve.

    Make Ahead and Storing Instructions

    You can prepare almost every element of this salad ahead of time, so when you’re ready to eat, all you have to do is assemble. This makes it one of the best meal-prepped lunches or dinners. We recommend keeping all components separate until you’re ready to serve and eat to prevent the lettuce and ingredients from getting soggy, as this doesn’t keep as well once everything is combined.

    Here’s all you have to do:

    • Cook the bacon and hard-boil the eggs up to 5 days ahead of time. Store in separate containers in the refrigerator.
    • Shred the rotisserie chicken and store in the refrigerator for up to 3 to 4 days.
    • Make the blue cheese dressing ahead of time and store it in an airtight container in the refrigerator for up to 10 days.
    • Shred the lettuce and halve the cherry tomatoes up to 3 days ahead of time and store in separate containers in the refrigerator.

    Tips for the BEST Cobb Salad

    For a memorable Cobb Salad that you’ll want to make on repeat, follow these tips:

    Use crispy bacon. For a salty flavor and crunchy texture, make sure you cook your bacon on the crispy side. Cook your bacon in the oven just before serving or toss it in the air fryer to crisp it back up if you’ve made it ahead of time.

    Hard boil your eggs just right. Avoid over-cooked eggs with dry, crumbly yolks by following our easy method of hard boiling like we use in our fried deviled eggs.

    Slice avocados just before serving. To keep your avocado slices bright green, slice them just before serving. You can even toss them with a little fresh lemon juice to help slow down the browning process.

    Make your own dressing. If time is short, store-bought versions work just fine, but for the best flavor, take the extra few minutes and make your own. You’ll get the most fresh flavor and creamy texture with a homemade dressing (try any of the ones below!).

    Dressing Substitutions for Our Cobb Salad Recipe

    We love our homemade blue cheese dressing for this recipe, but you can also use store-bought dressing if you’re short on time. Not a fan of blue cheese? These other dressings go just as well with Cobb Salad:

    • Homemade Ranch
    • Balsamic Vinaigrette 
    • Red Wine Vinaigrette
    • Caesar Salad Dressing

    What to Serve with Cobb Salad?

    For a complete meal, serve your Cobb Salad with:

    • A crusty bread, garlic toast, or tomato and feta toast points
    • A light soup like tomato soup, roasted sweet potato and leek soup, or lentil soup
    • Roasted green beans, tomato salad, corn ribs or other vegetable side dish
    • Refreshing and cool beverages like a red grapefruit and rum spritzer or a Michealda
    • Summer fruit and honey whipped ricotta crostata or a stone fruit tart
