Ingredients

  • 1 head romaine shredded
  • 1 cup halved cherry tomatoes
  • 1 cup shredded rotisserie chicken
  • 1 cup crumbled bacon (about 8 crispy slices)
  • 2 avocados thinly sliced
  • 4 hard boiled eggs thinly sliced
  • 2/3 cup crumbled blue cheese

dressing

  • 1 recipe blue cheese dressing

garnish

  • 2 tablespoons thinly sliced chives

Instructions

  • Place shredded romaine into a large bowl and drizzle with 1/2 blue cheese dressing. Toss together.
  • Top romaine with tomatoes and chicken.
  • Then top with crumbled bacon and sliced avocados.
  • Add sliced boiled eggs and crumbled blue cheese to the salad.
  • Drizzle with remaining dressing and sprinkle with chives. Serve.
