Does anyone remember those ’90s Arby’s commercials promoting their Roast Beef Sandwich – specifically their roast beef and cheddar sandwich? It’s one of those commercials that stuck out to me so much and I’m not sure why. Was it the mile high piled roast beef? The thick cheddar cheese sauce dripping down the sides? Or was it the “5 for $5” advertising? Who knows – but it’s something I still remember to this day.
Admittedly I never actually had one of those sandwiches ha!), but I was thinking about it the other day, and since we had just finished shooting our easy roast beef recipe, I had a big chunk sitting in my fridge. It was the perfect opportunity to try it out and man was it tasty! Naturally we had to put up our own version.
How to Make Our Roast Beef Sandwich
Process
CHEDDAR CHEESE SAUCE
- Place a pot over medium heat and melt butter.
- Once butter has melted, add flour and whisk until no lumps remain.
- Whisk milk, mustard and salt into mixture and continue to whisk together until mixture is smooth and no lumps remain, and mixture has slightly thickened.
- Remove mixture from heat and stir in grated cheese, small handfuls at a time, until all cheese has been added and cheese sauce is smooth.
ASSEMBLY
- Stack a third of the roast beef onto the bottom bun of each burger. Pour a generous amount of cheese sauce over each sandwich and gently press bun tops onto each sandwich. Serve immediately.
