Happy Wednesday! I hope everyone had a very filling Thanksgiving. I am super pumped about Christmas / Holiday season. I am the person who gets the Christmas stuff out the day after Thanksgiving, and I get really excited when I see ornaments at Rite Aid. Then you know it’s all really happening. This year, we are going to really bring it with some yummy cookie recipes for you guys, as well as some gift giving make your own – do it yourself- situations. So get ready. First up are these Chocolate Chip Rice Krispies Treat Cookies. Like most of you, I am a really big fan of rice krispies treats. So making them into cookies with chocolate was kinda a no brainer. Super yum. The rice krispies make the cookies amazingly chewy, and the chunks of marshmallow and chocolate are awesome little flavor pockets as you eat your way through. Hope you all enjoy!

The dough on these was really difficult to work with – I kept thinking that I hadn’t used enough liquid or butter. Did anyone else find this to be true? It was all crumbly nuggets and hard to make a cookie dough ball. However – the cookies that did come out were so delicious!!
I had the same problem. There was no way to “fold in” the extras…I had to get my hands in there and kind of mush everything together so it would stick. They crumbled when I put them on the cookie sheet too, had to make dough balls. First batch was a mess; looked nothing like the picture. All the marshmallows created holes and cracks in the cookies. Put the rest of the dough into a glass baking dish and made cookie ‘bars,’ which turned out nice.
Those pretty cookies had to have been meticulously arranged before baking!
I just pushed a few extra chocolate chips onto the dough balls before baking…nothin’ special :)
I used a stand mixer to mix my dough and had no issues. If the dough is too dry, adding 2-4 tablespoons of milk will make that problem go away!
Thanks for the tips! I’m kinda an amateur in the kitchen, so I don’t know what to improvise with and am very strict on recipes. I’ll try again :) Thanks for the response!
Thanks for revising the recipe! I’m going to try again this weekend.
Not a problem…sorry there was an issue the first time. I should warn though that any marshmallows on the sides of the cookies will still cause a nut lace-ish spreading effect, BUT only in the marshmallow area and the overall cookies turn out great!
Made these last night and they were DELICIOUS! LOVE LOVE LOVE thank you.
This might be the perfect cookie.
To spoonforkbacon,
The first line of ur directions says to mix in MILK, egg and etc. BUT there’s no measurement for milk in the ingredients?! Sigh, i’m already halfway through mixing and will hve to continue w/o. Hope the cookies turn out.
No milk needed in the recipe at all! Will be taken out of the directions shortly!
I’m having trouble with these cookies spreading out too far, they’re coming out more like a lace cookie and are too thin :( any suggestions? Thank you!
I had the same issue too. :/
I had the same problem too! They came out way to thin and crisp.
Hi all! Sorry about the issues people seem to be having with this recipe. I’ll be retesting it tomorrow and will let you know what the issue is ASAP!
ALL the good things in a cookie. Your styling and photography blow me away as usual, ladies!
making these bad boys tomorrow!
This is such a fun idea! I like rice krispies treats, but my boyfriend LOVES them. Like, possibly more than he loves me. But if I make these for him, I might be able to even the score ;)
Haha, sometimes I think there are sweets my bf loves more than me too…glad to know others share the same sentiment! ;)
I wonder if you could sub marshmallow fluff for the marshmallows? Marshmallow fluff doesn’t have gelatin in it. I want to make these right meow, but my boyfriend is also a vegetarian and would hate me forever if I made these and he couldn’t eat them.
Ahhhh!!! I am going crazy for these guys! Brilliant! Also, you are not the only one who had decorations up the day after Thanksgiving! I may or may not have snuck a few of them out before Thanksgiving too!
what the what!!! yum!!
What? No. Shut up your face. Rice Krispy Treats are my favorite. Chocolate Chip Cookies are my favorite. And you had to go and combine them into one amazing Super Treat. I’m thinking naughty thoughts now. Thoughts like “I should make these right now”. Gorgeous!
Chocolate AND rice krispie treats AND cookies together? Uh, yes please.
These look absolutely divine!! I will have to try these, they are the perfect treat. xx. McKenna Lou
Ohhh soo good!! I can’t wait to get some vegan marshmallows and try these!
I want these so bad right now. Love the combination of ingredients!
Hello from a new subscriber, so glad I found you! These cookies look delicious and I’m excited to check out your book!
great idea. bring on the make our own goodies! (these will be the first…for me!)
OMG yes!!!!
I have a half box of krispies and some leftover marshmallows and I am so making these instead of a half pan of rice krispie treats!
These cookies sound like so much fun – they would be a perfect addition to this years cookie tray!
Any suggestions for substitutions for the marshmallows? I am a vegetarian.
I love the book – I made 3 of the recipes for thanksgiving and they were a HUGE hit!
Thanks!!
I think the easiest sub would be to just buy vegan marshmallows, which is what I did. They sell them at Whole Foods if there’s one near you or there’s a few stores that sell them online.
I love putting rice krispies into unexpected places for fun texture and these sound perfect! And they go so well with marshmallows & chocolate! The giveaway I hosted for your book was a big hit, too.
Thanks, Averie! We really appreciate you doing the giveaway as well as all of your kind/supportive comments you leave us!! xo!
This is exactly like Momofuku’s cornflake chocolate chip marshmallow cookies, except with Rice Krispies!
