    Happy Wednesday! I hope everyone had a very filling Thanksgiving. I am super pumped about Christmas / Holiday season. I am the person who gets the Christmas stuff out the day after Thanksgiving, and I get really excited when I see ornaments at Rite Aid. Then you know it’s all really happening. This year, we are going to really bring it with some yummy cookie recipes for you guys, as well as some gift giving make your own – do it yourself- situations. So get ready. First up are these Chocolate Chip Rice Krispies Treat Cookies. Like most of you, I am a really big fan of rice krispies treats. So making them into cookies with chocolate was kinda a no brainer. Super yum. The rice krispies make the cookies amazingly chewy, and the chunks of marshmallow and chocolate are awesome little flavor pockets as you eat your way through. Hope you all enjoy!

    Chocolate Chip Rice Krispies Treat Cookies

      INGREDIENTS  

    • 1 cup (2 sticks) unsalted butter, softened
    • 1 cup light brown sugar
    • ½ cup granulated sugar
    • 1 large egg plus 1 egg yolk, room temperature
    • 1 ½ teaspoons vanilla
    • 1 teaspoon molasses
    • 2 cups plus 3 tablespoons all purpose flour
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 2 cups Rice Krispies cereal
    • 1 cup bittersweet chocolate chips
    • ¾ cup mini marshmallows

      INSTRUCTIONS  

    • Preheat oven to 350°F.
    • In a large mixing bowl with an electric mixer cream together butter and sugars. Scrape down sides of the bowl and mix in the eggs, one at a time.
    • Add vanilla and molasses and continue to beat together.
    • In another bowl whisk together the flour, baking soda and salt. Add flour mixture to the butter mixture and stir together until completely mixed together, but do not overmix.
    • Fold in the cereal, chocolate chips and marshmallows until fully incorporated. Refrigerate for 30 minutes to an hour.
    • Drop 2 ½ tablespoon sized dollops onto a baking sheet lined with parchment, about 1 inch apart from one another (the cookies will spread).
    • Bake for 10 to 12 minutes or until cookies have just begun to brown.
    • Allow cookies to cool for at least 5 minutes before serving. Store in an airtight container for up to 5 days.

      The dough on these was really difficult to work with – I kept thinking that I hadn’t used enough liquid or butter. Did anyone else find this to be true? It was all crumbly nuggets and hard to make a cookie dough ball. However – the cookies that did come out were so delicious!!

        I had the same problem. There was no way to “fold in” the extras…I had to get my hands in there and kind of mush everything together so it would stick. They crumbled when I put them on the cookie sheet too, had to make dough balls. First batch was a mess; looked nothing like the picture. All the marshmallows created holes and cracks in the cookies. Put the rest of the dough into a glass baking dish and made cookie ‘bars,’ which turned out nice.

            I just pushed a few extra chocolate chips onto the dough balls before baking…nothin’ special :)

          I used a stand mixer to mix my dough and had no issues. If the dough is too dry, adding 2-4 tablespoons of milk will make that problem go away!

        Not a problem…sorry there was an issue the first time. I should warn though that any marshmallows on the sides of the cookies will still cause a nut lace-ish spreading effect, BUT only in the marshmallow area and the overall cookies turn out great!

      To spoonforkbacon,

      The first line of ur directions says to mix in MILK, egg and etc. BUT there’s no measurement for milk in the ingredients?! Sigh, i’m already halfway through mixing and will hve to continue w/o. Hope the cookies turn out.

      This is such a fun idea! I like rice krispies treats, but my boyfriend LOVES them. Like, possibly more than he loves me. But if I make these for him, I might be able to even the score ;)

      I wonder if you could sub marshmallow fluff for the marshmallows? Marshmallow fluff doesn’t have gelatin in it. I want to make these right meow, but my boyfriend is also a vegetarian and would hate me forever if I made these and he couldn’t eat them.

      What? No. Shut up your face. Rice Krispy Treats are my favorite. Chocolate Chip Cookies are my favorite. And you had to go and combine them into one amazing Super Treat. I’m thinking naughty thoughts now. Thoughts like “I should make these right now”. Gorgeous!

      Any suggestions for substitutions for the marshmallows? I am a vegetarian.

        I think the easiest sub would be to just buy vegan marshmallows, which is what I did. They sell them at Whole Foods if there’s one near you or there’s a few stores that sell them online.
