    This viral TikTok protein bowl delivers 45+ grams of protein with an addictive combination of flavors like smoky taco beef, caramelized sweet potatoes, creamy cottage cheese, and a drizzle of hot honey that will have you prepping this bowl week after week.

    If any food, fitness, or meal prep content crosses your TikTok feed, you’ve seen some variation of this viral protein bowl this year. Like the viral butter board and grinder pasta salad, we had to see what the fuss was about, then add our own flavorful spin!

    We’ve adapted the viral protein bowl with thyme-roasted sweet potatoes, perfectly seasoned ground beef, creamy cottage cheese, and a topping of crunchy, nutrient-dense pepitas and hemp seeds, sliced avocado, and a drizzle of hot honey. It’s the kind of meal you’ll be excited to prep and eat a few days in a row (no flavor fatigue here). At home or on the go, this dish will satisfy your comfort food craving while keeping you full with over 45 grams of protein.

    Who Created This Viral TikTok Protein Bowl?

    The protein bowl trend has exploded, with several creators pushing out wildly popular versions over the past year or two. As with most viral TikTok trends, it’s hard to pinpoint exactly where it started, but many people credit Gracie Norton as the one who kicked it off back in 2024.

    With high-protein ingredients, visual appeal, and the ability to batch-cook and meal-prep for quick meals all week, everyone from fitness influencers to recipe creators has given this bowl their own spin. Our version features taco-seasoned ground beef, sweet potatoes, and cottage cheese with the most incredible fresh flavors for a crave-worthy, nourishing dish.

    How to Make Our Protein Bowl

    Process

    1. Preheat oven to 425˚F. Pour all sweet potato ingredients into a mixing bowl and toss together until fully and evenly coated.
    2. Spread sweet potatoes onto a baking sheet, in a single layer.

    1. Roast for 22 to 28 minutes, tossing every 8 to 10 minutes. Once sweet potatoes are tender, remove from oven and cool.
    2. Place all seasoning ingredients into a bowl and stir together.

    1. Place a large skillet over medium heat. Once skillet is hot add oil and shallot. Sauté shallot for 2 to 3 minutes, until lightly caramelized and browned on the edges.
    2. Add ground beef and garlic and break up until evenly crumbled.

    1. Sprinkle taco seasoning over beef and stir together for 1 minute or until beef has browned.
    2. Add tomato paste and water and stir together. Season with salt and pepper as needed and stir. Lower heat to medium-low and cook for an additional 1 to 2 minutes or until mixture thickens, stirring occasionally. Remove from heat set aside.

    Assembly

    1. Place 1/4 ground beef mixture into each bowl and divide sweet potatoes between the bowls.
    2. Top sweet potatoes with remaining ground beef mixture.

    • Swap the ground beef: Use ground chicken or turkey, shredded chicken, ground pork, or even plant-based crumbles or black beans for a vegetarian option.
    • Instead of sweet potatoes: You can use roasted butternut squash or regular potatoes using a similar cooking method, or swap in sauteed peppers and onions, roasted brussels sprouts, or cauliflower rice. For a veggie-forward protein bowl, include a variety of veggies.
    • If you don’t like cottage cheese: First off, don’t discount it when it’s mixed with this many incredible flavors and textures! But, if you prefer, you can skip it completely, swap it for plain Greek yogurt, or sprinkle some queso fresco or shredded cheese on top of the bowl instead.     Prep and Make Ahead Instructions

    The beauty of this viral recipe is that you can make it and eat it right away, prep parts of it to assemble another night, or meal prep it all so it’s ready to grab and go.

    To Fully Make Ahead for Meal Prep

    Cook the sweet potatoes and beef as directed. Let cool and store in a microwave-safe container for up to 4 days.

    When ready to serve, warm the beef and sweet potatoes in the microwave for one to two minutes, or until warm, and assemble the bowls with fresh toppings and cottage cheese.

    Partial Prep-Ahead Ideas

    To make assembling these bowls a little easier on the day you’ll eat them, you can prep some or many parts of this recipe ahead of time.

    • Mix the taco seasoning and store it in an airtight container, jar, or bag at room temperature (can be stored for up to 6 months, or as long as the spices you have are good for).
    • Dice the sweet potatoes and store them in cold water in an airtight container in the refrigerator for up to 3 days (this helps keep them from turning brown and drying out).
    • On the day of cooking, prepare the recipe as directed, having already diced the sweet potatoes and combined your seasoning mix, saving time, energy, and dishes!

    Batch Cooking Ideas

    This recipe can be made as a double or triple batch to enjoy all week, but can also be frozen to reheat and use months later.

    • Roast sweet potatoes and cook the beef as directed. Let cool, then place in airtight freezer containers or bags, and freeze for up to three months. To reheat the sweet potatoes, preheat the oven to 400˚F, place the frozen sweet potatoes on a parchment paper-lined pan, and roast for 20 minutes or until warmed through, stirring halfway.
    • To freeze cooked ground beef, let it cool and place it in an airtight container for up to 3 months. Thaw overnight in the refrigerator, then warm in the microwave or on the stove until heated through, before eating.

    Tips and Tricks for Beef Protein Bowl Success

    • For perfectly caramelized and crisp sweet potatoes, cut them as uniformly as you can, avoid overcrowding the pan, and be sure to flip them every 8 to 10 minutes so each side gets nice and browned.
    • If your ground beef mixture is too watery after adding the tomato paste and water, just continue to stir over the heat until it thickens.
    • While we love doing as much prep as we can ahead of time, you’ll want to slice your avocado just before serving to prevent browning and add the pepitas and hemp seeds when serving as well, so they stay crisp and crunchy.

    Best Way to Pack Protein Bowl To-Go

    If you’re meal prepping this protein bowl to eat at work, school, or on the go, we recommend packing everything in three separate containers (with the hot honey and avocado on the side).

    • Container One: Pack the sweet potato and ground beef in a microwave-safe container, as these can be heated up together.
    • Container Two: Portioned cottage cheese.
    • Container Three: Pepitas, hemp hearts, and cilantro can be stored together in a small container.

    Keep everything in a cold bag or a refrigerator until you’re ready to eat.

    • 2 1/2 tablespoons olive oil
    • 1 tablespoon minced thyme
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper

    • 1 1/2 teaspoons garlic powder
    • 1 1/2 teaspoons cumin
    • 1 teaspoons chili powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon salt

    • 2 tablespoons olive oil
    • 1 minced shallot
    • 8 ounces lean ground beef
    • 2 minced garlic cloves
    • 1 1/2 tablespoons tomato paste
    • 3 tablespoons water

    • 1/2 avocado, thinly sliced
