Ingredients

roasted sweet potatoes

  • 12 ounces diced sweet potatoes (1 medium sweet potato)
  • 2 1/2 tablespoons olive oil
  • 1 tablespoon minced thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

taco seasoning

  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons cumin
  • 1 teaspoons chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt

taco meat

  • 2 tablespoons olive oil
  • 1 minced shallot
  • 8 ounces lean ground beef
  • 2 minced garlic cloves
  • 1 1/2 tablespoons tomato paste
  • 3 tablespoons water

assembly

  • 8 ounces cottage cheese
  • 1/2 avocado, thinly sliced
  • 2 tablespoons pepitas
  • 2 teaspoons hemp hearts
  • 2 tablespoons hot honey
  • 1 tablespoon minced cilantro

Instructions

sweet potatoes

  • Preheat oven to 425˚F. Pour all sweet potato ingredients into a mixing bowl and toss together until fully and evenly coated.
  • Spread sweet potatoes onto a baking sheet, in a single layer.
  • Roast for 22 to 28 minutes, tossing every 8 to 10 minutes. Once sweet potatoes are tender, remove from oven and cool.

taco seasoning and meat

  • Place all seasoning ingredients into a bowl.
  • Place a large skillet over medium heat. Once skillet is hot add oil and shallot. Sauté shallot for 2 to 3 minutes, until lightly caramelized and browned on the edges.
  • Add ground beef and garlic and break up until evenly crumbled.
  • Sprinkle taco seasoning over beef and stir together for 1 minute or until beef has browned.
  • Add tomato paste and water and stir together. Season with salt and pepper as needed and stir. Lower heat to medium-low and cook for an additional 1-2 minutes or until mixture thickens, stirring occasionally. Remove from heat set aside.

to assemble

  • Place 1/4 ground beef mixture into each bowl and top with sweet potatoes.
  • Top sweet potatoes with remaining ground beef mixture.
  • Scoop cottage cheese into each bowl and top with sliced avocado.
  • Top bowl with pepitas and hemp hearts.
  • Finish with a drizzle of hot honey and a sprinkle of minced cilantro.
