    Today we have a recipe for you courtesy of Adrianna Adarme and her new book PANCAKES!!! This book is made for pancake lovers / breakfast lovers, and has 72 awesome recipes for pancakes of all kinds. While Pancakes has mostly breakfast pancake recipes (duh), she also has a entire section dedicated to dinner pancakes which is pretty cool. I picked this recipe because when we were shooting this book (I shot it, and Jenny food styled it!) I ate this and it was delicious. I ate the one we shot for this post also. So good! This recipe is for the huaraches, so you can add whatever toppings you like and it will be delicious. We added carnitas, iceberg lettuce, queso fresco, tomatoes, cilantro, and lime juice. Done. Easy. Delicious.

    Prep Time: 10 minutes mins
    Cook Time: 25 minutes mins
    Servings: 4

      INGREDIENTS  

    • 1 cup masa harina
    • ½ teaspoon salt
    • ¾ cup plus 2 tablespoons warm water
    • ¼ cup refried beans (canned or homemade)
    • Vegetable oil, for the skillet

      INSTRUCTIONS  

    • In a medium bowl, mix together the masa, salt, and warm water. Cover the bowl with plastic wrap and allow the dough to rest for 10 minutes.
    • Add the refried beans to a bowl of a food processor and pulse until the beans become a paste. Alternatively, you could mash them with a fork.
    • Separate the dough into 4 balls. Roll each ball into an oval shape. Using for thumb, make a long, deep well in the center. It will resemble the shape of a cigar. Place 1 scant teaspoon of the beans into the well. Pinch the cavity closed, enclosing the beans completely.
    • One at a time place each piece of filled dough between two pieces of plastic wrap, Using a rolling pin, lightly press into a 4-inch-long oval that is ¼-inch thick.
    • Preheat your skillet over medium-high heat and brush with ½ teaspoon of vegetable oil. Add the huaraches and cook for 1 to 2 minutes on each side, flipping when lightly golden brown. Continue until all 4 huaches are cooked. Remove from skillet and set aside.
    • Place the skillet over medium-high heat, and pour in vegetable oil until it reaches ½ inch up the sides. Once the oil is hot, carefully add the huaraches to the pan and fry for 1 to 2 minutes, until golden brown on each side. Gently turn and cook on the opposite side for 1 to 2 minutes more. Transfer to paper towels to drain. Serve hot.

      A 4-5 stack of medium sized buttermilk pancakes with tons of warm maple and/or betty crocker syrup drizzled on the top and pools on the side with crunchy peanut butter and sprinkles. MMmmm.

      Well you know over the pond we like our pancakes super thin so you can roll them up after filling them with yummy stuff. If I’m having savoury pancakes, then cheesy leeks and bacon sauce all rolled up in crepe-like pancakes.
      If I’m in the mood for a little sweetness (what is life without a little sugar?), then I’ll whip up a batch of american pancakes, thick and fluffy with blueberries in the batter and I’ll make a yoghurt dressing with lemon and sugar (it’s the Brit in me!) to drizzle over the top. YUM!

      I love oatmeal pancakes either topped with homemade applesauce or fresh strawberries and real maple syrup. A side of bacon or sausage is a nice addition, too! Yummy!

      I love my pancakes right out of the pan with lots of melted butter, and a slight drizzle of maple syrup. I prefer the saltiness over the sweet when it comes to pancakes. Yum.. :-)

      My favorite pancakes, as of late, are banana with a mixture of light maple syrup (vermont fancy is what the bottle says) and dulce de leche smeared ontop and maybe a bit of whipped cream :)

      Saturday mornings are PANCAKE mornings! I make my pancakes with yogurt instead of milk and they are creamy, soft and delicious. I live in Canada so maple syrup is a must and I like them with bacon, whatever berries in season: cherries, blueberries, raspberries, strawberries, etc and if I have time I whip up some cream. Pancakes forever!

      We just moved into a new house and the kitchen is sort of a disaster, so right now my favorite way to eat pancakes is at the diner across the main road outside of our neighborhood. They make a lovely sweet potato pancake with walnuts. Would love to get my hands on this books and start cooking in my kitchen!

      Oh, yum! That looks delicious. :) My favorite way to eat pancakes is with maple syrup. And lots of it. I pretty much just use pancakes as an excuse to dip another in maple syrup. lol!

      Hello there !

      My favourite way to eat pancakes is with waaaay too much nutella, on a very just-out-of-the-pan-hot pancakes, with sometimes raspberry or banana mixed in it !

      This book would definately be my bible ;)

      Ahhh my favorite pancakes in the entire world are my late mother’s “french pancakes”- so simple, milk, egg and flour- a little thicker than a crepe and very eggy they don’t soak up all the syrup and become mushy. I love them so, and they remind me of Mom. Many times I have made those pancakes and wished she was still here to talk to. THAT is my comfort food
