    Today we have a recipe for you courtesy of Adrianna Adarme and her new book PANCAKES!!! This book is made for pancake lovers / breakfast lovers, and has 72 awesome recipes for pancakes of all kinds. While Pancakes has mostly breakfast pancake recipes (duh), she also has a entire section dedicated to dinner pancakes which is pretty cool. I picked this recipe because when we were shooting this book (I shot it, and Jenny food styled it!) I ate this and it was delicious. I ate the one we shot for this post also. So good! This recipe is for the huaraches, so you can add whatever toppings you like and it will be delicious. We added carnitas, iceberg lettuce, queso fresco, tomatoes, cilantro, and lime juice. Done. Easy. Delicious.

    Servings: 4

      INGREDIENTS  

    • 1 cup masa harina
    • ½ teaspoon salt
    • ¾ cup plus 2 tablespoons warm water
    • ¼ cup refried beans (canned or homemade)
    • Vegetable oil, for the skillet

      INSTRUCTIONS  

    • In a medium bowl, mix together the masa, salt, and warm water. Cover the bowl with plastic wrap and allow the dough to rest for 10 minutes.
    • Add the refried beans to a bowl of a food processor and pulse until the beans become a paste. Alternatively, you could mash them with a fork.
    • Separate the dough into 4 balls. Roll each ball into an oval shape. Using for thumb, make a long, deep well in the center. It will resemble the shape of a cigar. Place 1 scant teaspoon of the beans into the well. Pinch the cavity closed, enclosing the beans completely.
    • One at a time place each piece of filled dough between two pieces of plastic wrap, Using a rolling pin, lightly press into a 4-inch-long oval that is ¼-inch thick.
    • Preheat your skillet over medium-high heat and brush with ½ teaspoon of vegetable oil. Add the huaraches and cook for 1 to 2 minutes on each side, flipping when lightly golden brown. Continue until all 4 huaches are cooked. Remove from skillet and set aside.
    • Place the skillet over medium-high heat, and pour in vegetable oil until it reaches ½ inch up the sides. Once the oil is hot, carefully add the huaraches to the pan and fry for 1 to 2 minutes, until golden brown on each side. Gently turn and cook on the opposite side for 1 to 2 minutes more. Transfer to paper towels to drain. Serve hot.

      Yay! pancakes for all meals. My favorite way to MAKE pancakes is with yogurt in them…but my favorite way to EAT them is any way that someone else wants to cook them for me, which is why this book would be a great present for my boyfriend :)

      Well I will be getting my hands on this book one way or another, but here goes :) I love making pupusas — kind of like huaraches but with cheese inside! — as savory dinner “pancakes” with a slaw on the side. I actually learned the method from Adrianna :) Sometimes my mom will make carne asada and a salsa that comes off the grill to go with the pupusas…. OH MAN that is killer-good! these look very tasty also, I will try them with beans — and you ladies made everything look so deliciously pretty :) As usual!

      This looks delicious! What a fun cookbook. My favorite way to eat pancakes is to use a yeast-based pancake batter, topped with Brie cheese, pecans, and apple compote.

      Gosh! You are SO going to be my salvation now I am going to live by myself during my Erasmus year! Haha! I love your recipes, so easy!

      BTW, I love eating pancakes with chocolate siroupe, cream and strawberries (quite a clasic haha!) And I’ve discovered they totally taste better when you cook them for someone you love too.

      Oh man I love pancakes! My go-to is simple buttermilk and maple syrup, but I’ve tried dozens of recipes looking for the perfect, fluffy pancake. This book is definitely in my wheelhouse!

      One of my favorite childhood memories is corn pancakes and sausage for dinner. It was such a treat! I mix it up a bit now – include jalapenos or red chili flakee, chopped bacon, and scallions in my corn pancakes but still love them for dinner with grilled chicken or ribs. I also love making mini chocolate raspberry pancakes stacks (3 to a stack) with raspberry sauce as the “glue” and fresh whipped cream, chocolate curls and fresh raspberries on top for dessert. People LOVE getting pancakes for dessert!

      I LOVE pancakes! My favorite are savory pancakes. Normal pancakes but add items like cheese and bacon or ham and top off with a little syrup, YUM! Love the savory/sweet combo. I also love PB&J pancakes. Add a little peanut butter or PB2 and fresh fruit in the batter and then top them off with syrup or if you’re feeling adventurous a little bacon jam! Again, the sweet/savory combo, SO GOOD!

      I’ll have to try the huaraches. My favorite way to eat pancakes is for Sunday brunch, hot off the griddle, spread with peanut butter and drizzled with maple syrup.

      its a toss up for me … thin pancakes with berries and a bit of whip cream or fluffy pancakes (cold) sprinkled with a bit of coarse sugar.

      I love my pancakes simple, just buttered, with a side of bacon. They can be buttermilk pancakes, basic pancakes, corncakes, sometimes blueberry or chocolate chip pancakes. Just a little, well maybe a lotta, buttah on top.

      I loooove pancakes, especially for breakfast dinners :) My fave way is corn pancakes, with a little smear of butter… a couple strips of good crunchy smokey bacon and a drizzle of nice dark maple syrup, nom nom!

      omg, I LOVE pancakes!! I literally eat them once a week and am always trying to come up with new ideas so this would be awesome. I love all pancakes, but as long as I eat them with Aunt J syrup… no Mrs. B for me! :) Thank you!
