    Today we have a recipe for you courtesy of Adrianna Adarme and her new book PANCAKES!!! This book is made for pancake lovers / breakfast lovers, and has 72 awesome recipes for pancakes of all kinds. While Pancakes has mostly breakfast pancake recipes (duh), she also has a entire section dedicated to dinner pancakes which is pretty cool. I picked this recipe because when we were shooting this book (I shot it, and Jenny food styled it!) I ate this and it was delicious. I ate the one we shot for this post also. So good! This recipe is for the huaraches, so you can add whatever toppings you like and it will be delicious. We added carnitas, iceberg lettuce, queso fresco, tomatoes, cilantro, and lime juice. Done. Easy. Delicious.

    Servings: 4

      INGREDIENTS  

    • 1 cup masa harina
    • ½ teaspoon salt
    • ¾ cup plus 2 tablespoons warm water
    • ¼ cup refried beans (canned or homemade)
    • Vegetable oil, for the skillet

      INSTRUCTIONS  

    • In a medium bowl, mix together the masa, salt, and warm water. Cover the bowl with plastic wrap and allow the dough to rest for 10 minutes.
    • Add the refried beans to a bowl of a food processor and pulse until the beans become a paste. Alternatively, you could mash them with a fork.
    • Separate the dough into 4 balls. Roll each ball into an oval shape. Using for thumb, make a long, deep well in the center. It will resemble the shape of a cigar. Place 1 scant teaspoon of the beans into the well. Pinch the cavity closed, enclosing the beans completely.
    • One at a time place each piece of filled dough between two pieces of plastic wrap, Using a rolling pin, lightly press into a 4-inch-long oval that is ¼-inch thick.
    • Preheat your skillet over medium-high heat and brush with ½ teaspoon of vegetable oil. Add the huaraches and cook for 1 to 2 minutes on each side, flipping when lightly golden brown. Continue until all 4 huaches are cooked. Remove from skillet and set aside.
    • Place the skillet over medium-high heat, and pour in vegetable oil until it reaches ½ inch up the sides. Once the oil is hot, carefully add the huaraches to the pan and fry for 1 to 2 minutes, until golden brown on each side. Gently turn and cook on the opposite side for 1 to 2 minutes more. Transfer to paper towels to drain. Serve hot.

      I am a lover of pancakes. But. I love eating them right off the griddle by folding them in half like a taco with my hands and dipping them straight into syrup. Not very ladylike but it sure is tasty!

      Living alone & one a busy schedule, breakfast for dinner is my go-to on nights I just don’t feel like trying something new. I like to take my pancakes, made with bisquick on my killer griddle, and bacon onto the front porch and take in the view of my neighborhood from the rocking chair.

      Oh my god I LOVE huaraches, I get it every single time I go to Tacos Por Favor in LA. Mmmm

      My favorite way to eat pancakes? Okay, this is a throwback from when I was a kid. My dad used to make us pancakes with powdered sugar and chocolate syrup. TOTALLY decadent, TOTALLY delicious.

      I am a NUT for pancakes, in my home I hold the title of queen of breakfast with 22 saucer sized pancakes eaten in 1 sitting! BURP :)

      My favourite way to eat pancakes is a savoury pancake for dinner. I stuff them with all sorts of things but my favourite is a creamy leek, potato and carrot stew that I make. I use the pancakes like enchilladas, fill them, roll them and pop them in the oven covered in cheese. It’s the best dinner ever.

      I eat pancakes at all times of the day and my favorite is banana walnut, with the bananas and walnuts cooked inside the pancake. However, a pancake is not complete without bacon, drizzled in syrup and eaten in the same bite. Yum!

      I love to add a little cinnamon to my pancakes, topped with butter (of course), a sprinkle of powdered sugar then drizzled in syrup. I’ll add pecans if their on hand too.
      And of course the best part of eating these pancakes is defending them from my little pup.

      I love my pancakes like Leslie Knope loves her waffles – with a lot of whipped cream. :)

      Also topped with the maple syrup from Trader Joe’s.

      I love dinner pancakes! I like to make them thin (almost like crepes) and roll them like burritos with whatever dinner leftover I have. Pork & cheese & grilled veggies is probably my fav combo though!

      In our house Pancakes are always made three ways.

      1. Basic Fluffy – For the picky two year old
      2. With mini chocolate chips – For the 9 and 12 year old
      3. With fruit (Blueberries or Bananas) – for the 38 years olds.

      This happens at least two weekends a month.

      We call is ‘Pancake Sunday’ at our house. Our fav way is with mini chocolate chips and real maple syrup! Nutella comes in a close second.
