Banana Bread French Toast


This Banana Bread French Toast recipe is so delicious. We make ours with a cereal crust which gives this soft and tender banana bread a really nice crunch. This is definitely a recipe to look forward to after you have made and enjoyed a loaf of Banana Bread. I  personally like to make a loaf, and then look forward to Banana Bread French Toast the next morning.  There are just two of us in our house, so figuring out ways to use the rest of a huge loaf of Banana Bread is helpful. Don’t get me wrong, we love Banana Bread, but in reality we can only get through about half a loaf. Making Banana Bread French Toast is also a great way to calm yourself after a huge earthquake (we had one here last night! UGH). How to make Banana Bread French Toast

  1. Prepare egg mixture. In a bowl whisk together the eggs, milk, vanilla, cinnamon, and nutmeg.
  2. Prepare cornflake crust. In another bowl, add the crushed cornflakes.
  3. Dip Banana Bread. Using dried out Banana Bread slices, dip each slice into the egg mixture, and then dredge in the cornflake crust until fully coated. The even coated crust will make sure you have a nice crunchy texture all around.
  4. Cook Banana Bread French Toast.  Add butter to a hot griddle or pan and cook the slices on each side for  3 to 4 minutes or until golden brown and crispy. Drain on paper towels if needed.
  5. Serve with Maple Syrup.
  6. OPTIONAL! Slice bananas and cook on a griddle or in a pan with butter and a little brown sugar until caramelized. Serve over your Banana Bread French Toast!

Use slices of banana bread for our Banana Bread French Toast recipe! We dredge ours in cornflakes which makes the slices come out with a nice golden crispy texture which is a nice contrast to the tender and soft interior.

  INGREDIENTS  

  • 1 recipe chocolate chip-coconut banana bread, sliced into 3/4 inch thick slices
  • 3 eggs, beaten
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • 2 cups cornflakes, finely crushed
  • ¼ cup butter, softened and divided

Topping

  • 1 banana, peeled and sliced
  • maple syrup

  INSTRUCTIONS  

  • Allow banana bread to dry out slightly in open air for about 1 day (you can also place the slices on a baking sheet and place in a 200°F oven for about 3 hours).
  • In a shallow dish whisk together the eggs, milk, vanilla, cinnamon, and nutmeg. In another shallow bowl, add the crushed cornflakes.
  • Dip each slice of bread in the egg mixture then dredge each piece in cornflakes until completely covered.
  • Place a large nonstick pan or griddle over medium heat and melt 2 tablespoons butter.
  • Cook French toast on each side for 3 to 4 minutes or until golden brown and crisp.
  • Drain on paper towels for 1 minute before plating and serving with sliced bananas and maple syrup.
