Golden, crispy-edged pan-fried gnocchi tossed with sweet cherry tomatoes, torn burrata, and bright basil vinaigrette for the caprese salad upgrade you didn't know you needed.

- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 pound premade gnocchi for choice

- 1/2 recipe basil vinaigrette
- 1 pint halved cherry tomatoes
- 8 ounces burrata
- fresh basil leaves for garnish
- salt and pepper to taste

Place a skillet over medium-high heat. Once skillet is hot add oil and butter.
Once butter has melted add gnocchi. Sauté for 5 to 6 minutes, until browned and crisp on each side. Season with salt and pepper.
Remove from heat and transfer to a platter.

Toss together with halved cherry tomatoes.
Rip burrata into small pieces and top tomatoes and gnocchi.
Drizzle platter with vinaigrette and season with salt and pepper.
Top with fresh basil leaves and serve.
