Smash Cake

A great and delicious gluten-free,  refined sugar-free Smash Cake Recipe. Our smash cake is very easy to make and  guaranteed to put a smile on your kids faces!

Cake Ingredients

Medjool Dates Boiling Water Bananas Eggs Vegetable Oil Maple Syrup Vanilla Extract Almond Flour Cinnamon Baking Powder Baking Soda Salt

Preheat oven to 350˚F.  Combine almond flour, cinnamon,  baking powder, baking soda, and salt.

In a food processor pulse dates a few times. Add boiling water and pulse. Transfer paste to a mixing bowl.

Add bananas and puree until smooth.

Mix the puree with the date paste.  Add eggs, oil, maple syrup, and vanilla extract. Whisk together until smooth.

Add flour mixture into banana mixture and whisk together until fully combined.

Spray 3, 6” round cake pans with baking spray. Pour batter into each cake & bake.

Frosting Ingredients

Cream Cheese Unsalted Butter Heavy Cream Maple Syrup Vanilla Extract Salt

In a stand mixer, beat together cream cheese and butter until light and fluffy.

Add remaining ingredients. Beat together until fluffy. Refrigerate frosting for about 30 minutes.

Spread frosting over the top of a cake round. Stack and repeat with all cakes. Frost sides with a very thin layer.

Refrigerate cake and frosting for 30~60 minutes. Frost swoops all over cake with remaining frosting and top with sprinkles.
