Cake Flour Baking Powder Baking Soda Cinnamon Salt Nutmeg Unsalted Butter Brown Sugar granulated Sugar Unsweetened Applesauce Eggs Vanila Extract Carrot Dired Currant
Combine flour, baking powder, baking soda, cinnamon, salt, and nutmeg.
In another bowl combine butter, sugars, applesauce, eggs and vanilla.
Pour wet mixture into the dry mixture, stir until smooth.
Fold carrots and currants into the batter until evenly mixed.
Fill 4 prepared round cake pans with equal amounts of batter and bake.
Spread a thin layer of Cream Cheese Frosting onto the top of one cake round and top with another cake round.
Frost the sides and top with a even layer of the Cream Cheese Frosting
Decorate cake with crushed nuts & piped little carrots or other design!
