BAKED POTATO SOUP

Peel and diced baked potatoes.
Sauté shallots with butter.
Add flour to the shallots and cook.
Add in the stock and milk, simmer to thicken it.
Add in the baked potatoes and season.
Blend the soup together in a blender, or with an immersion blender.
Add the sour cream and season with salt and pepper.
Mix together and then serve!
Garnish and serve!
