There are SO MANY great recipes happening over there. In fact there is a new one popping up every- day. Today’s recipe is this Mediterranean Style Farro Salad with a Shallot, Herb Vinaigrette. We both love making big batches of farro salads because they hold for days so well. Perfect for picnics as well as quick, on-the-go lunches.

Using the farro grain makes this dish super filling, but totally doesn’t weight you down. Yum! We love the chewy texture of farro with the bright, briny flavors of sun-dried tomatoes, olives and feta. The salad is also great because of its versatility; you can add whatever in- gredients you want to this salad according to your taste. The possibilities are endless! This salad is all we’ve been able to think about lately and we’ve been craving nothing but a big bowl of this with an ice cold, bubbly Pellegrino to wash it all down.     Great timing guys! I’ve been looking across my kitchen at the most voluptuous tomatoes in my windowsill, thinking how they are the perfect size for stuffing. Been pondering since yesterday what that stuffing would be. Now I have it! Mediterranean Farro Salad. I even have the farro! And I have some lamb spareribs in the freezer that need to be grilled.     This looks amazing! I I don’t have any farro in the pantry, but I DO have couscuos, orzo, and quinoa in the pantry which i think would still taste great with these! Thanks for sharing!

    I’ve never tried faro but it looks similar to a quinoa or barley… thanks for the recipe. I can just serve this in a bowl and cozy up with some office re-runs
